Game Meat Hygiene Course
UK Deer Management have been running courses in game meat handling from August 2005 onwards. This is because from the 1st of January 2006 new food hygiene rules were introduced in the UK covering game (this includes all game birds, all deer, duck, geese, pigeon, rabbit, hare, even squirrel and rook)
The normal anatomy, physiology and behaviour of wild game both large and small.
Abnormal behaviour and pathology changes to wild game, due to diseases and environmental contamination, which may affect human health.
The hygiene rules and proper techniques for transportation of wild game after killing.
Legislation and provisions on the animal heath and hygiene conditions governing the placing (which includes selling and giving away) of wild game on the market.
